And by the way, I saw one his chefs using his amazing knife skills and I knew we were in for good things to come!Īs an overview I will say that Chef Ethan creates a beautiful menu. She was mentioning a Rainbow Roll, Sashimi Salad, their Blue Fin, Toro, Uni etc. Kat and I were talking (before the food started) about what dishes we judge a sushi place by. And that’s just what we did, at The Glass Box. You ask him to serve the freshest, the best of what he’s got and you leave the decision making to him. What is an Omakase you ask? It’s when you give the chef ‘carte blanche’. Tonight we enjoyed a large Omakase at the Sky Mall. The Glass Box is truly in line with good food consistently and a beautiful experience. Personally, I am happy to welcome him to the neighborhood. I think Chef Ethan hits the nail on the head when these are his goals for this new restaurant.

Always a driving beat of music and a Chef whose mission for this restaurant is about authenticity, consistency, providing a great atmosphere and an engaging experience. I don’t know who designed it, but it’s hard to have an intimate conversation at most of the restaurants in the sky deck for sure, unless and if you are in The Glass Box. One of the biggest complaints I’ve heard about this mall is ‘the roar of the crowd’. It’s Del Mar Heights off the 5 Freeway, above Jimbo’s in ‘The Sky Deck’, a new part of this mall. This past weekend we descended upon The Glass Box in the Del Mar Highlands Town Center to do a Restaurant Review.
